Lemon Poppyseed Cookies

Go ahead, make fun of me. As soon as I’m done with Whole30, I pull out a cookie recipe. Can you blame me? I haven’t had sugar for a month! Plus, it’s not like I ate the entire batch in one sitting. In fact, I actually shared these lemon poppy seed cookies.

Lemon Poppy Seed Cookies

These lemon poppy seed cookies were actually all Bud’s idea. Typically, I go for cookies that are full of chocolate. Citrus is in season though and lemon poppy seed is such a great flavor that I had to try it out in a cookie. Turns out, it makes a great cookie! These are fluffy, but still crisp on the outside. The flavor is a great balance between sweet and zingy. And just look at this glaze!

Lemon Poppy Seed Cookies

Lemon Poppy Seed Cookies

For the cookies

  • 2 1/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cups white sugar
  • 2 tablespoons lemon zest
  • 1 cup unsalted butter (softened)
  • 2 large eggs
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons poppy seeds

For the glaze

  • 1 cup powdered sugar
  • 10-11 teaspoons lemon juice
  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside. 

  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside. 

  3. In a small bowl, combine the sugar and lemon zest to create a lemon sugar. 

  4. In the bowl of an electric mixer with a paddle attachment, beat together the butter and sugar mixture until fluffy. Add the eggs in one at a time, then add the lemon juice and the vanilla. 

  5. Once the wet ingredients are combined, turn off the mixer and scrape down the sides of the bowl. Turn the mixer back on low and slowly add the dry ingredients until just combined. Add in the poppy seeds until thoroughly combined.

  6. Drop the dough into tablespoon sized balls onto the baking sheet and then bake for 12-14 minutes. Once baked, remove from the oven and cool on a wire rack.

  7. Meanwhile, make the lemon glaze by combining the powdered sugar and lemon juice. For a wetter glaze, add more lemon juice. For a dryer glaze, add more powdered sugar. 

  8. Once the cookies have cooled completely, top with the glaze and serve.
